AN INTRODUCTION TO OUR SAUCES
I’m often asked why I think we Brits love Indian food so much and I always say because
it tastes SOO good. Flippancy aside, I have always endeavoured to showcase the best
of India's many dishes and have tried to make them more relevant to our busy lifestyles
by making them lighter and easier to cook. I have now tried to do the same with
my sauces. We all lead busy lives and the busier I get the more I look for an easy,
acceptable cheat. These sauces are just that and now I can truly say, sometimes,
it is good to cheat!
I have chosen from some of my favourite dishes as well as our collective favourites
to create a range of 10 sauces which all have their own individual characters. They
are all authentic in flavour, light enough to have as a midweek meal but also special
and elegant enough to serve to friends and family.

I have included specially selected spices to go with each Spice Tailor sauce and
have included a red Guntur chilli as well to add in if you like the extra heat.
Some sauces also come with a marinade which is called the base sauce, if you have
the time you can marinate your meat in this sauce which will help tenderise the
meat and inject some flavour into it before you even start to cook. If you don’t
have the time, add this sauce in as per the packet instructions and you will have
a meal on the table in under 10 minutes.
You can tailor the sauces to your lifestyle by deciding what to add in. You might
be a hardened carnivore or a lover of vegetables, the sauces work really well with
a whole range of proteins and vegetables. I have listed some suggestions on the
packets and have a cookbook on the site but by all means enjoy and experiment. The
sauces are all vegetarian (you add your own meat) and are made from fresh ingredients
and spices and are free from artificial colours, preservatives and flavours. I hope
you love them as much as I do and they soon become your favourite store-cupboard
standby as they have mine.
