Spiced Spinach Curry

PREPARATION :

Cut the paneer cheese or meat into bitesize cubes.

  1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds.
  2. Add paneer or meat, brown lightly and add the base sauce; simmer for 1 minute.
  3. Stir in the main sauce and simmer for 3-5 minutes or until the paneer or meat is cooked through.

BITS TO BUY TIPS

  1. 250g skinned chicken fillets (lamb, pork or duck breasts), 200g paneer, 1 can chickpeas or 3 eggs.
  2. 1 tsp vegetable or olive oil.

TIPS

  • Use whole skinned chicken joints and cook for 30 minutes for a truly delicious meal.
  • Use leg of lamb, cubed and cook for 1-1½ hours for an authentic 'saag ghost'. Add water as necessary.
  • Boil store-bought paneer for 10 minutes to soften.
  • Also great with sautéed mushrooms, chickpeas or sweetcorn.

If you don't like whole spices in your dish, grind them to a powder and then add them in at the end.
