This moreish and bold chutni uses Indian limes that have thin skins, which - once they have been preserved in syrup and spices - mellow and soften and are just outright delicious.
This chutni adds a zingy, sweet, tanginess to your meal - whether served as is on the side or used as a drizzle or glaze. It is delicious as an accompaniment but also makes complex dipping sauces, sweet and sour dressings, a tangy relish or an amazing mayo topping.
Make a Tangy, Chilli Dipping Sauce :
Mix 70g lime chutney (chop the lime pieces a little), with 1 tsp. ginger, 1 fat clove of garlic, 1½ inches of cucmber, a little deseeded chilli and some coriander, all finely chopped.
Add 1-2tbs. boiled water, mix and serve.
Makes a great, complex drizzle or glaze by blending with 2 tbs. mayonnaise. Great on corn and the cob or sweet potato, chicken and so much more.
