This punchy chutni is our adaptation of the popular Rajasthani ‘Lasan Ki Chutni’ - or ‘spicy garlic chutni’ in English. In our version, the addition of tomatoes balances out the heat from garlic and chilli to create a deliciously well-rounded flavour profile. The result is a beautifully spicy, garlicky, tangy and sweet match made in heaven.

In Rajasthan, it would be spooned onto the side of the plate and eaten with everything from bhajis to curries. However, it is so versatile, we also like to add it to pasta sauces, spread it on baguettes, use it to create marinades or mix it with mayo and enjoy it with crackers or crisps. If you ask us, it is the ultimate store-cupboard essential.

Anjum’s Top Tips

Create Delicious, Spicy Chicken Wings :

Mix contents of the pot with 1 tbs. runny honey, 2 tsp. ketchup, 1tbs. each of olive oil and Worchestershire sauce. Add a little seasoning.
Skin 400g chicken wings, toss in the marinade.
Grill/bake for 18-20 mins or until the chicken is cooked through, turning once.

Stir into mayo for an amazing burger topping or sandwich smear.

Makes a really delicious marinade for chicken or pulled pork.

It is a really quick way to add punch to a lack-lustre pasta sauce or even stir fry some prawns in it and add a little cream and pasta water for a super quick and easy pasta sauce.

Amazing as a quick flavour punch for any dish that needs deeply punchy, tomatoey, garlic flavour.
