Keralan Coconut Mudcrab Curry by Harry Foster
It was such a joy to work with Australian sustainable seafood expert and MasterChef contestant, Harry Foster, who created this wonderful seafood recipe for us. Harry is a fantastic chef and his knowledge of seafood is second to none. If you are lucky enough to live near sandy beaches like Harry, this is the perfect seafood recipe too cook outdoors. But, it can also be replicated in your in-land kitchen with seafood from your local fishmonger or supermarket. Harry added some green chilli over the top; we would add one or two whole green chillies in with the curry for added heat and flavour. We would also add a good splash of water or fish stock to the sauce.
