Elegant Filo Topped Vegetable Curry

Delicate Korma Curry

Ingredients

  • 1 pack of The Spice Tailor Delicate Korma Curry
  • 2-3 sheets of filo pastry (depends on their size) 
  • 25g butter, melted 
  • 2 good cups worth of vegetables, cut into chunky pieces (I add cauliflower, broccoli, green beans, mushrooms and peas)
  • 1 tsp. vegetable oil
  • 2 tbsp. tomato purée
  • 2 tbsp. single cream
  • Salt and black pepper to taste

Method

  1. Heat the oven to 1800C/1600C Fan assisted/Gas Mark 4.
  2. Cut each filo sheet into 10cm squares so you have a total of 18 pieces. Brush 6 of these squares with some butter, and layer another piece of filo on top. Repeat this step using the final 6 filo squares. 
  3. Scrunch each square up into flower shapes and pop onto a lined baking tray, edges-side up. Bake in the oven for 15-18 minutes, or until golden and crisp.
  4. Meanwhile, bring a large pan of water to the boil and blanch the vegetables, (except peas) for 3 minutes. Drain. 
  5. Heat the oil in a saucepan, add the vegetables and stir-fry for 1 minute. 
  6. Add base and main sauces from the pouches, tomato purée and peas and bring to a simmer. (Save the spices from the kit for a different dish, or grind to a fine powder and add in). 
  7. Cook until the vegetables are tender, 2-3 minutes. Add the cream and take off the heat. Season to taste with some salt and black pepper.
  8. Serve hot with the filo on top.
